For the crust you will need:

(Recipe is for a 12-14 inch pizza pan)

2 cups shredded carrots

1 cup almond flour

2 large eggs

1/2 tsp salt 

1/2 tsp pepper

1/2 cup of shredded cheese  (any kind you like or mixture – I used Mozzarella and sharp cheddar)

Optional: Additional seasonings like garlic powder, onion powder, etc)

Cooking Oil Spray  (You can use foil for an easier clean up)

Toppings:

1/4 cup of barbecue sauce

2/3 cup shredded or chopped chicken in barbecue sauce

1/2 cup of cheese (any kind you like or mixture – I used Mozzarella and sharp cheddar)

Optional Toppings: Mushrooms, Peppers, and even more shredded carrots.

It’s the freaking weekend! I’ve recently posted a few drinks on instagram and promised you the recipes! Here are the recipes for the first two I made.

Makes one serving or two smaller servings. Feel free to double up. 

Purple Weapons Frozen Gin and Lime Boozer

  • 3 shots of Gin (2 for less of a kick and perhaps if you don’t really drink gin)
  • 2  tbsp of Lemon Juice
  • 3 drops of Angostura Aromatic Bitters
  • 2 – 4 packets of Splenda or 2 tbsp equivalent no calorie sweetener or 1-2 tbsp of honey
  • 1-2 cups of ice cubes

Instructions

Place all the ingredients in a blender and blend; start with 1 cup of ice then add more until the slushy consistency is to your liking.

Serve in glass or just drink it straight from the blender and enjoy.

Purple Weapons Frozen Cherry Tequila Boozer

  • 3 shots of tequila (2 for less of a kick)
  • 1 tbsp of Lemon Juice
  • 1/2 cup of fresb cherries (you can use the frozen kind)
  • 2 – 4 packets of Splenda or 2 tbsp equivalent no calorie sweetener or 1-2 tbsp of honey
  • 1-2 cups of ice cubes

Instructions

Place all the ingredients in a blender and blend; start with 1 cup of ice then add more until the slushy consistency is to your liking.

Pour into a glass and enjoy.

Fun Fact: You can make this ahead of time, after making you can pour the blended contents in a freezer bag, and freeze. When you’re ready just place in a blender and blend back to a slushy consistency.

What You Will Need:

  • 12 oz Can of chicken (drained)
  • 1/4 tsp Ground pper
  • 1/4 tsp Salt
  • 1/4 tsp Salt-free All Purpose Seasoning
  • 1/2 cup of Mayonnaise or Plain Greek Yogurt
  • 1 Green apple (diced) 
  • 1 pear (diced)
  • 1/2 cup dried cranberries
  • 1/4 cup walnut pieces 
  • Burrito Sized Whole Wheat or Spinach Wraps  

This makes 4-5 Wraps also you can enjoy this without the wrap

Now let’s get cooking!

  1. In a bowl combine chicken, pepper, salt, cranberries, apple, pear, walnuts, salt-free all purpose seasoning and yogurt or mayo in a bowl. 
  2. Spoon chicken mixture down centers of wraps. Fold in both sides of each tortilla, then roll up burrito style and enjoy.



Hey Guys! It’s been a while since one of these episodes. 

It’s a Wrap! No I’m kidding but 80% of the next episodes are going to be wraps, cold wraps, grilled wraps, quick wraps… It will be wraptastic. After all it’s getting warmer, and adding more heat to my Manhattan Apartment is not ideal. I will avoiding the oven unless it’s for pizza! 

 

Let’s get Started

What You Will Need:

  • 12 oz Can of Tuna (drained)
  • 1/4 tsp Ground Pepper
  • 1/4 tsp Salt
  • 1/4 tsp Garlic Powder
  • 1 tbsp of Lemon Juice
  • 1/4 tsp Salt-free All Purpose Seasoning
  • 1/2 cup of Mayonnaise or Plain Greek Yogurt
  • 1 cucumber (Thinly sliced (as shown in photos) – Using a mandolin or a food processor) 
  • 4 Burrito Sized Whole Wheat Wraps
  • Toothpicks (optional)

Did you notice I gave measurements? Yup I did that! Now let’s get cooking!

  1. In a bowl combine tuna, lemon juice, pepper, salt, garlic powder, salt-free all purpose seasoning and yogurt or mayo in a bowl. 
  2. On a plate lay the wrap and place cucumber and tuna on the wrap and roll as shown. 
  3. You can now eat the wrap as is or you can cut it in half, sushi sized or in 3 or 4 per roll. Use the toothpicks to make sharing easy and they also hold the wraps together more securely.
